Coffee has the most concentrated season in our range, so buying and processing plans are prepared several months before the harvest starts.
Growing conditions
Contracted coffee farms sit on basalt soils in the Lam Dong highlands. Altitude and the day-night temperature range act directly on bean density and cup character — which is why the same variety grown at different altitudes gives different quality.
Season
Harvest runs October to January, peaking in November and December. After the season, green coffee is stored so it can be supplied year-round.
Cultivation and picking
Member households farm to one agreed protocol and keep input and pre-harvest interval logs. The share of ripe cherry at picking is the single most important parameter: a high proportion of unripe cherry pulls down the whole lot, so the cooperative agrees picking criteria with growers at the start of the season.
After harvest
Cherry is processed by the method agreed with the customer, dried to target moisture, hulled, graded by screen size and sorted to remove defects. Green coffee is bagged and stored under controlled humidity.
