Frozen durian pulp extends the supply window of durian well beyond the fresh season. For food and beverage manufacturers it is the only way to hold a stable raw material supply through the year.
The raw material is fruit picked riper than the fresh grade, because the objective here is flavour and sweetness rather than transit time. Pulp is separated by hand, inspected and graded before freezing.
Rapid freezing preserves texture better than slow freezing: ice crystals form smaller, so fewer cells rupture and there is less drip loss on thawing.
