Nam Ha Highfarm durian comes from contracted orchards in the Lam Dong highlands, typically 800 to 1,000 metres above sea level. The wide day-night temperature range means the flesh builds dry matter slowly but evenly, giving firmer texture than lowland fruit.
We do not strip an orchard in one pass. Each tree is picked over several rounds by fruit age, and picking maturity is set by the market: sea freight is cut earlier than air freight. We agree this with the customer at quotation stage, because getting maturity wrong ruins the whole lot at the far end.
After harvest, fruit reaches the preparation area the same day to be cleaned, graded by weight and appearance, checked for defect rate and packed to the customer specification.
