Mild highland temperatures are the single most important condition for leafy greens: heat pushes plants to bolt and degrades leaf quality. This is where highland production holds a clear advantage over the lowlands for this group.
Because cycles are short, sowing is staggered so supply is continuous rather than bunched. That lets us schedule deliveries around the customer requirement instead of making the customer wait for a cycle.
Leaves lose water very quickly once cut, so greens are cooled as early as possible, then graded, cleaned and packed in a cool environment, with the cold chain held unbroken through to delivery.
